Hard to believe it’s almost the end of 2021. As we begin to wind down for the year and head into the festive season, many of us are thinking about taking a holiday, spending time with family, and inevitably, eating too much! To kick off the festive frivolities, the Mortgage Express team would like to share a few of our go-to festive favourites: seasonal recipes that never disappoint.

Vicky’s “Never-too-late Christmas Cake”

For those of us who are time poor (yes, even in a year of lockdowns!), try Vicky’s “never too late Christmas Cake”.

“Super easy, made in bulk every year so it makes great gifts and you can substitute for Gluten Free easily. The trick is to ‘feed’ it generously every week and any whisky will do!”

Karen’s Very Merry Cherry, Cinnamon and Vanilla Jam

This super-delicious addition to your Christmas morning brekkie is a favourite of Karen’s. Spread over fresh sourdough or oven-warmed croissants, it pairs perfectly with ricotta!

“Cherries, what a short but spectacular season they have! Besides eating as many as possible, I like to save the joy for later by creating this jam. Then, you can have them all year round.”

Baileys Mascarpone Dip

Serve with chocolate wafer rolls and fresh strawberries for an uber-glamourous dessert that belies the small amount of effort it takes to make.

“This is part of my New Year’s Eve fest, and I serve this a couple of hours after my ribs dish to give everybody a much needed sugar boost that would perk up any “would-be retiring early” friends!”
